Yes!!! What I'm about to share with you is an absolute failproof recipe. If you don't believe it then you'll have to try it and prove me wrong!
Who doesn't love cake?! I mean... unless you hate life, I can't see how someone wouldn't like cake. This sponge is so perfect. I'm using the word perfect, because before I tried this recipe I was never 100% happy with the cakes I did but, I am absolutely in love with this one. So if you love cake this is the recipe for you.
It's super easy and your cake will come out tasty, golden and fluffy!!
Before I reveal this beautiful recipe, I would like to say that it is very easy to change the flavours according to what you want. This will be a simple vanilla sponge, nothing else... but add some chocolate ganache to it and... BOOM!!! You've got a very yummy cake.
Here's an almond sponge with a chocolate mousse filling. But lets stick to the simple vanilla recipe. Here's what you need:
Dry Ingredients:
1 and 3/4 cups flour
2 tsp baking powder
1 cup sugar
pinch salt
Wet Ingredients:
1 cup plant based milk
2 tsp vanilla extract
1tbs vinegar (white wine or cider)
1/3 cup vegan butter/margarine
You've read if fine!! That's all you need!! Simple, basic ingredients! Nothing fancy that no one has in their kitchen! These are everyday ingredients.
Method:
Heat oven to 180ºC
Combine all the dry ingredients in a large bowl.
Combine the plant based milk, vanilla extract and vinegar in a measuring jug. Leave it rest for a couple minutes.
Melt the butter until liquid.
Pour vinegar mix onto the dry ingredients and stir. Then add the butter.
Rub margarine into cake tin and sprinkle with some flour evenly.
Bake for 35 minutes in the oven or until done.
Your cake should be slightly golden, smell heavenly and feel very fluffy. Let it cool down for a little bit. Once it's cool down you can do whatever you want with it. Cut it in half and add some buttercream to it or just melt some chocolate with some soya cream and then pour it all over the cake. I mean there are literally so many things you can do, just go with whatever you like.
Some tips:
Make sure you mix the ingredients well, it should be quite a runny batter.
If you want to make a lemon cake then instead of 2 tsp of vanilla extract, add one of vanilla and one of lemon and throw some lemon zest in there. So good!! (If you're more of an orange person then go for orange instead of lemon... same rules apply!)
For the almond cake replace half cup of the flour with almond meal and use 1tsp of vanilla extract and 1 tsp of almond extract (you can add a little bit more if you want a stronger taste).
Chocolate cake? Cut some of the butter and add chocolate instead!
The choices are limitless!!!
